Chocolate Chia Pudding

Raw. Gluten free. Vegan

(serves 1)


1/2 cup almond milk or water
3 T chia seeds
1 T cacao or carob powder
1 tsp vanilla extract
2 T agave or coconut sugar or maple syrup (I used a pinch of stevia and less agave to minimise the sugar content)
1/4 cup young coconut flesh ( if not dried coconut works fine)
1/4 cup water
garnish of choice- I used sliced banana, raspberries and cacao nibs


In a small jar/container combine almond milk, chia seeds, cacao/carob, vanilla,1 T sweetener of choice and shake vigourously. Let the chia seeds absorb the liquid by letting the mixture stand for 5-10 mins and by shaking in-between.

Combine coconut, water and 1 t of sweetener in a blender/magic bullet and blend until smooth. Pour coconut cream mixture into a bowl and spoon chocolate chia mixture on top.

Garnish with banana, raspberries and cacao nibs.
Goji berries, blueberries and dried coconut also work well 🙂
