Raw Blueberry and Banana Pudding

Raw. Vegan. Gluten Free.

The recipe makes about 2-4 serves (depending on how much of a piggy you are :P) as it’s very rich and the nuts make it very filling (and still fattening- the good mono and polyunsaturated fats though).
All ingredients listed for each pudding are simply thrown into a blender/magic bullet/food processor together until the desired smooth consistency is reached. You could probably do without adding any sweetener such as the agave to save on calories and sugar as the sweetness from the fruit should be enough. A pinch of stevia- a very strong natural, no calorie sweetener is a good alternative. Add more or less of the fruit to the cashews depending on how fruity you like it.


– 1/2 cup fresh or defrosted frozen blueberries
– 1/2 cup raw cashews
– 4 Tbsp water
– 1/2 Tbsp coconut oil (optional)
– 1-2 Tbsp agave syrup or a pinch of stevia (optional)


– 1 medium-large banana
– 1/2 cup raw cashews
– 1/2 Tbsp coconut oil
– 1 tsp vanilla extract or 1/2 vanilla bean (optional)
– 1 Tbsp of agave and/or pinch of stevia (if you like it sweet).
– 4 Tbsp water
– Teeny tiny pinch of turmeric for colour

I layered the two puddings in a wine glass and garnished with goji berries and blueberries.

Best served chilled 🙂
