Summer Mango Noodles


A quick health and light summer meals! 

Mango sauce
one large mango
 15 mint leaves
2cm ginger chunk
 a pinch of salt, pepper and fresh or dried 
chilli flakes 

Spaghetti
1-2 medium peeled zucchinis 
(can substitute or add carrot and/or parsnip)

Method
Blend all of the mango sauce ingredients together until smooth (add water for a thinner consistency)
Using a vegetable spiraliser- spiralise zucchini into spaghetti (if you don’t have one of these devise’s a vegetable peeler will do a similar job by creating thin vegetable strips).
Mix sauce and noodles together and demolish! 🙂
