Gluten free. Vegan. Sugar free
Inspired by Dr. Oz’s ‘mean green cauliflower machine’ soup. A super quick, easy and tasty nourishing winter’s meal.
– 1 medium head of cauliflower (steamed)
-2 C peas (steamed)
– 2-3 cloves of crushed garlic
– 2 handfuls of fresh basil leaves
-3-5 C veggie stock or vegetarian chicken stock (depending on desired consistency)
– 1 C soaked raw cashews (soaked for 2 hours)- omit cashews if you want a lower fat version
Wait for the vegetables to cool down. Throw everything into a blender, or with a stick blender- blend ingredients until smooth puree consistency is achieved.
Serve with freshly cracked pepper and pumpkin seeds 🙂
ps: If reheating your soup, it’s always best to use the stove top as opposed to the microwave. Microwaves alter the molecular structure of foods, making them less recognisable to the body. Stove- top cooking always feels more nourishing and satisfying compared to a microwaved meal 🙂
