Fruity beet balls

Raw. Vegan. Gluten free. Low fat

ok, so there is one there is one thing that I really hate to do- wasting food!  After a juicing frenzy yesterday, i was left with all of this pulp.  Hesitant to throw it out, i came up with this recipe to make the most of all of the fruit and veggies I used 🙂 
What you will need:
– 2 C juicing pulp (I juiced, carrots, beetroots, apple, ginger and celery)
– 1 C medjool dates
– 1/3 C dried coconut
– 1 T lacuma powder (optional)
– 1/4 C orange juice or water or fruit juice of choice
– 1 t cinnamon
– 1/3 C chopped dried apricots, goji berries and saltanas/dried fruit of choice
– Dried coconut to roll balls in
What to do:
– Throw everything except the last two ingredients into a food processor until well combined
– Hand mix in the dried fruit
– Roll mixture into bite-sized balls and roll in coconut
